If your not a watercolor painter, but you enjoy watercolors, can you express what it is that you particularly like about watercolor paintings?

I prefer the quality of an art work created on paper, the handmade nature of the work is more evident to me. In a gallery composed of oil paintings, acrylic paintings, watercolors or pastels. . . I will always be drawn first to the works on paper. For instance - I prefer the pastels of Wolf Kahn to his oil paintings.
